It is produced by washing wheat flour dough with water until all the starch dissolves, leaving insoluble gluten as an elastic mass, which is then cooked before being eaten.

Seitan is a meat substitute made from wheat gluten. Seitan comes the closest to real meat that a vegetarian or vegan can have.
Of course this happens, the question is only to what extent.
